Pancakes?? made from sweet potato?? Surely not!

I've gotta share this one with you all because they are amazing if you make them right and perfect pre-contest aswell as a clean low carb meal

130g Sweet Potato
1 tbsp of Apple sauce (unsweetened)
5 egg whites
2 or 3 pinches of cinnamon/nutmeg
1/2 teaspoon Stevia/splenda
1 scoop of vanilla whey protein (optional but works better with the consistency if you end up adding it)

1.   Slice the sweet potato in to thin slices (around a cm thick) and place in a microwavable bowl
2.   Add a tbsp of water and microwave for 1 minute or until soft
3.   Throw the potato in the blender and add 1 tsbp of unsweetened apple sauce
4.   Crack and add 5 egg whites
5.   Add 2 pinches of nutmeg and cinnamon with the stevia
6.   Add the whey protein if desired and blend until thick
7.   Pour in to pan and flip once rising in the middle

I don't always use the whey protein but works and tastes pretty good with it. If you don't add the whey, just add an extra egg white or two then top the pancakes with veggies  Grin
