been using alot of almond extract lately and this reminded me of some good ol' amarretti! these are delicious with a sweet cup of coffee! dunked in of course Wink

200g of Oat Flour/ground oats
Splenda or Truvia to taste (i used about 1tbsp of truvia)
1 tsp Baking Powder
1 tbsp Orange Extract
tsp Salt
tbsp Almond Extract
4 Egg Whites
jar of baby food or Applesauce (works best with this but it also works with nut butters/ground almonds, use about 100g)

Preheat oven to 175 degrees
Mix dry ingredients (oat flour, baking powder, salt) together in a large bowl.
Mix wet ingredients (egg whites, Splenda, almond extract, orange extract, baby food/applesauce/nut butter/ground almonds) together in a medium bowl.
Add wet ingredients to dry ingredients and mix together.
Spray baking tray with a non stick cooking spray and spread mixture on sheet. should be about 1 1/2 inches thick
Bake for 20 min on middle rack.
Remove from oven and let it cool for about 10-15 minutes.
Cut dough down the middle and cut into about 13 slices. turn individual biscuits on their sides
Bake in oven for another 15-20 minutes. (15mins will have it slightly moist, 20mins crunchy)
let cool for 5-10mins and munch!
