Tried this tonight for my healthy 'cheat' meal and it worked a treat........ well my wife ate it so it must have been alright!

Serves two

75g Quaker oats.
2 whole eggs beaten.
1oz whole grain flour.
250g chicken breast thinly sliced.
Half a lemon juice.
Drizzle of extra virgin olive oil.
100g low fat greek yoghurt+chopped mint and parsley to serve.


Put the flour, beaten egg and oats onto three separate plates. Coat each thinly sliced portion in the flour, than dip into the egg followed by the oats.
I than lightly coated a pan in coconut oil and cooked for about 6 mins per side, no reason why you couldn't grill or bake it though.

Serve with the yoghurt mint dip and veggies/rice etc.

Was simple and good, also fixed my incessant KFC cravings Smiley
