Another recipe from Matt Lovell - again my kids love them - fraid I only got the first one on Sunday and the last when they had finished - but pretty good and makes a decent change to breakfast.

Itís basically a normal pancake batter recipe but instead of using white flour which as no nutrient value at all (and something I just can't eat) use a mixture of Whey Protein, Ground Flax Seeds, Oat Flour or Coconut Flour. It turns these into a real yummy super food.
I use Oat flour - just throw a handful lof oats into a grinder and done.

100g Coconut Flour/Oat Flour
100g Protein Powder ( vanilla whey is my favorite)
30 g Ground Flax seeds
20g Cocao nibs
20g Mixed Nuts and seeds( ground up or whole)
Ĺ-1 teaspoon of Cinnamon
Small amount Coconut oil for cooking in pan
2 eggs
100 ml Milk ( You may need more or less add it slowly until you get a consistency you like)

Tried mine with Manuka Honey drizzled on the top with a few blueberries.
